Being from Buffalo, I need a wing fix now and then.  The regional favorite doesn’t exactly top the list of healthy foods, so instead of missing out on all that flavor, I like to whip up this simple bowl for a quick and easy meal.

Saturated fat and calories are kept to a minimum and sliced pear adds a nice contrast to the fire and tang of tabasco and blue cheese.

Start with pre-cooked brown rice, or grain of choice.  Those microwaveable cups work well if you don’t have any cooked on hand.

Put your grain, some chopped cooked chicken ( I’m hooked on store-bought rotisserie birds for convenience) and about a tablespoon or less of blue cheese crumbles in a bowl.  Mix with tabasco to taste and microwave for about 2 minutes.

Add sliced fresh carrots, celery and pear if using. Mix with the warmed rice, chicken and cheese.

Can’t get much simpler!
