ROASTED BRUSSELS SPROUTS

 

People who love Brussels sprouts LOVE Brussels sprouts.  I’m one of those people.  Hubby is not.

“But they’re good for you.”

“I’m not eating those vile things.”

“They fight cancer and other diseases and help you live longer.”

“I choose death.”

And so goes our dinner discussion, until now.  Even a confirmed sprouts hater admitted that these were “pretty decent.”  I’ll take it!

Start by preheating your oven to 350 degrees and lining a baking sheet with parchment paper.

Wash and quarter about one pound of Brussels sprouts.  In a medium sized bowl, mix the sprouts with about 2-3 tablespoons of extra virgin olive oil, 2-3 tablespoons of low sodium soy sauce, 1/4 teaspoon of red pepper flakes, 1/4-1/2 teaspoon ground ginger if desired and 2-3 fresh garlic cloves, whole or sliced and pepper to taste.

Bake for about 30 minutes, stirring half way through.

That’s it!  Super easy, right?
